Zucchini Blueberry Bread

Zucchini Blueberry Bread




This recipe makes 4 mini-loaves. Perfect for sharing.
3 eggs
1 cup vegetable oil
3 teaspoons vanilla extract
2 cups white sugar
2 cups shredded zucchini
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
3 teaspoons ground cinnamon
1 pint fresh blueberries

Preheat oven to 350 degrees. Lightly grease 4 mini-loaf pans.
In a bowl, beat together eggs, oil, vanilla, and sugar. Fold in the zucchini. Beat in the flour, salt, baking powder, baking soda, and cinnamon. Fold in blueberries and transfer to mini-loaf pans. (They will each be pretty full.)
Bake for 40 minutes or until a knife inserted in center comes out clean. Cool in pans.

Semi Laundry Room/Storage


Here is our semi-laundry room.  This room is located off our kitchen in the barn.  It was so cluttered for so long that I finally got around to pulling it all out and vacuumed the whole thing down from ceiling to walls to floor.  Oh, the dust kitties that where accumulating in there.  It's amazing what is hiding in corners when you're really not looking.  So I reorganized it all in a better way.  It looks so much better for an unfinished room.  We can only keep our dryer out here because we have no heat in our barn and the washer will freeze up so that has to stay in our basement.  It is a pain to drag laundry up from the basement but we have to do what we have to do.  Someday I want to make a real laundry room elsewhere in the house possibly off the kitchen.

Addition to our Family

We have an announcement to make...We rescued a little kitten (8 weeks old) from going to the animal shelter.  The kids really twisted my arm and they just had to show me the pictures (of course) which put me over the deep end of total cuteness and I fell in love.  Then the girls decided to name the kitty before they even got an answer from us.  Of course, I had to call Timmy to ask what he thought and I'm sure in the tone of my voice he knew that I was hooked and that he couldn't say no.  So we said yes to the kids!  They screamed and were jumping around with tons of excitement.  We named her Boo and she fits in your hand.  What a perfect name for her with being an almost all black cat.  She is the most cutest thing.  She is sleeping in our room till she gets a little older.  She's been sleeping on me right around my neck like a scarf.  Our other 2 cats are not liking her at all.  They get a little close to sniff and see what she's doing and they hiss and growl at her.  Yes, my cats growl like a dog.  They think that they are one at times.  :)

Boo is a keeper for sure!

Beer Making Part 2

The beer sat for 2 weeks and we were able to get it ready to bottle them all.  This wasn't to bad of a process but at least once we got started it moved pretty quick.  After we finished bottling all 50 bottles it was time for them to go back to a dark cool place to sit again for a week. It finally all came ready and it was time for tasting to see if it came out good.  Timmy loved it and thought he didn't do bad for a first batch of beer.  He's had a few people sample and say that it was very good.  Let's see how long it last and then it will be time to start all over again.  I will continue to help but sampling I will not.  :)
